Ingredients are items used to produce food, which feed the dwarfs.
Some ingredients like apples can also provide direct feeding, being then additionally included directly in the Category: Food.
Some ingredients like berries are also used to craft items other than food, being then additionally included in the Category: Raw materials.
In game all ingredients—excepting flour—can be found at the 6th tab in the "Craft" menu (dish icon).
